There’s no application and no announcement. A Michelin inspector arrives unannounced, dines anonymously, and pays like any other guest. Over time—often across multiple visits by different inspectors—the restaurant is judged solely on the food: ingredient quality, mastery of technique, harmony of flavors, personality of the chef, and consistency. 

If excellence holds up meal after meal, year after year, a star appears. If it slips, it disappears just as quietly.

The Michelin Guide now operates across roughly 45 countries, recognizing about 3,500 restaurants worldwide with Michelin stars, the vast majority holding one star, with a few hundred two-star restaurants and roughly 150–160 three-star establishments at the very top. 

Alongside stars, Michelin also awards the Bib Gourmand, its respected “honorable mention” for restaurants offering excellent food at a good value. Together, these distinctions form a tightly controlled, annually updated system that shapes modern fine dining.
